Let them eat cake

When I have a long day, I love cooking something sweet. Beating the eggs, seeing them whoosh into one big sloppy pile with the sugar, makes me calmer somehow.

You never get the full effect of a cake until you cut a piece out. The layers are the best.

I got a little too excited. The cakes were a tad too warm, and as you can tell from the slightly melty icing, they didn't like having a choclate coat on yet. But, I was thrilled to be able to pull out this cake holder we rarely use. Baking is the best time to break out the glassware/china sets.

My mom joined me when we made the white chocolate frosting. My day kept getting sweeter as the kitchen got busier, and the cake began to bake. The sweet smells from the oven rose to the ceiling, and as I put in the first load of dirty cooking dishes, I felt my spirits soaring too.

Possibly the most exciting part of baking a cake is when the layers get stacked. The cake itself is finally cool enough to add icing to, and the brown outside layer, where the butter has created this delicious outer butter casing, waits impatiently for the cool frosting to come. This step makes my tired day giddy. I start imagining the decorations that will adorn the top of my creation.

This is my final product. And let me tell you, my long day and my three loads of dishes warranted me having the cake and eating it too.
